Which reminds me - my new Ani Phyo dessert book arrived yesterday! I haven't had time to really look at it much, though. It's interesting that she's on the road so much more now and is using vanilla extract, and pre-ground flax and other stuff, and a personal blender instead of a VM!

Ani is going techno...lol. Ignore the extract and just scrape out the beans if you prefer. I prefer it that way.
Personal blenders vs VM could be ok due to the pain in the rear part of trying to scrape out every last morsel in the VM. That part was a bad design. And I ignore the pre-ground flax. What was she thinking?![]()

Well, for someone on the road those are probably relatively good choices. However, since I'm at home, I'm sticking with my VM. I never scrape vanilla seeds; I always simply blend the whole bean.
And I'm with you on the flax! Especially on the road, when it can't be kept cold. I would think whole seeds (flax or chia), soaked before blending would be a lot better. I never soak anything since I have the VM--I never think that far in advance!

Ooh, I have chia seeds that I've never used. I'm looking forward to it. Mercola used those as an ingredient to his coco cassaba bars but people were put out with the seeds so he changed the recipe, much to my dismay.
Ani has a recipe for almond milk that throws in the whole bean too. Like you said she's probably doing this for convenience sake to suck in more people to eat raw.
I have an eggplant that I'm trying to figure out what to do with. I posted an Eggplant Ravioli recipe that sounds interesting but I'm trying to veer from so many nuts and just go raw eggplant. I'm at work but gonna search my books and online for a to die for eggplant recipe. I love it cooked.

I doubt I'll replace the chia seeds I have once they're used up. They're a lot more expensive than flax. Maybe they're better nutritionally. But I'm fine with flax, so I'll probably stick with that. Might be a good alternative for you, though!

Hey Res & Kathy,
I have been checking in on you but know posting. I've has been hectic. Glad to see you still have your humor. Eating raw except one meal each Sat & Sun. I'm have trouble drinking more than 40 oz water daily. I think I should be drinking 60-80 oz. I have started trying to walk 30 min on the treadmill every other morning at 5AM..but that is spotty too. Maybe I will march into March on the right step, lol.

I bought the chia seeds on a whim. Not to replace the flax. I think I may throw flax into shakes. I found a pizza crust recipe that uses yellow squash instead of flax but I haven't tried it yet.
I was dying for something chocolate yesterday but too tired to make anything. It seems as if I'm always missing one ingredient or another for the recipe I want. lol I need raisins to make Ani's oatmeal/raisin cookies. No dehydrating! They look pretty Yum.
