I don't know if you have a dehyrator, but I think you do.
Mine's homemade from 30 years ago and doesn't have a fan or anthing like that. I have seven trays, 2x2' each. And one of them is a heavy-duty hardware cloth tray that can hold more weight.
The dryer doesn't have a thermostat, but it does have a rheostat that allows me to turn the heat up or down. And then I can pull the lid more open or closed.
All this to say: I use it, with a thermometer, to create an environment with a particular temperature. For instance, when I make my spelt bread I first let it rise at 80 degrees, and then later on its final proof is at 95 degrees.
So maybe, if you have a dehydrator, you could rig it some fashion to use it to make kombucha at a particular temperature?
Just a thought. If you don't have a dehyrator yet, keep it in mind when you shop for one!

Specifically, either a thermostat or a rheostat, and one tray that can hold more weight. (I'm assuming the kombucha would be made in its water. Maybe it's actually made in some other way and diluted later, in which case the weight might not be a factor.)
Anyway. Just me rambling! I get kombucha every once in a while, but I don't like it much.
