    mtmouse, I finally found your vanilla almond mylk recipe that you suggested over on the other thread, on page 80 here!!

    I have a question. If I were to use vanilla extract (non-alcoholic) instead of a vanilla bean, how much would you recommend? My DS loves vanilla almond milk and this recipe sounds really good. I showed it to him and he's very interested in me making him some. We don't use dairy products at all in our home. Both DS and I are allergic, plus I don't eat any animal products at all. It was nice to find a recipe that doesn't use oil too, because I don't do free oils either, for health reasons (McDougall Program).

    Lin,

    I think with the 5-cup recipe, I'd start with 1/2 tsp of vanilla extract and see how it tasted, then up it. My guess is that you might end up using 1 tsp, depending on how vanilla-y you like it. However, I think it's best to start small, because you can always add more but you can't take it out!

    My DS loves the vanilla flavor in the almond milk and I was thinking that 1 tsp. might be about right, but didn't know.
    I do have a Vita-Mix and I wasn't sure how much it would take for 5 cups of water! I was actually concerned that 1 tsp. might not be enough!!!

    I've only had the Vita-Mix for a few months, so I'm new to using it. It's really nice though. I got it at Costco when they were doing a demo.

    I'll take your advice and start out little and then add more if it needs it.

    Ahhh, the VitaMix! I have a blender, but found that it doesn't do veggies well for smoothies, so I am considering getting one for my post-cleanse.

    I certainly stalled a long time before I got mine, but I've never regretted it for a moment.

    You can get reconditioned ones on the VM website for $369. They have the same 7-year warranty as new. I also got the dry blade so I could grind grain for DH's bread. That made it $425, I think. Make sure you tell them that your friends got it with free shipping, and they'll give it to you. (Not sure if they'll do that for the $369 unit alone--but I asked first about the $425 package, then told them I wanted the free shipping. I figured if they wouldn't give it to me, I'd simply forget the dry blade. But they did give it, so I went with it.)

    I've used it every single day since it arrived, and sometimes up to 5 times a day!

    but, WHERE IS EVERYONE???


    Back to school (teaching) and boy oh boy am I busy!! Have no time to prepare anything for lunch, so I have been throwing an avocado, tomato and some flax crackers in a bag and cutting it up at work!!!

    How is everyone? I am just soooo overwhelmed!!! Finally getting to sit down. Working late, late, every single day....Sorry just venting here!!
